Friday’s recipe: Mincemeat

Homemade Mincemeat – Alice Westrum’s recipe
3 1/2 lb cooked beef rump roast
10 lbs Jonathon applies, peeled, cored and chopped
6 lbs seedless, raisins, washed
10 oz currants
2 1/2 oz candied citron, ground fine (microwave, then chop)
3 oranges, sliced, seeded and ground (cut thin to remove seeds and chop)
1 lemon, sliced, seeded and ground (cut thin to remove seeds and chop)
1 1/2 lbs light brown sugar
2 lbs white sugar
3 1/2 T cinnamon
2 T nutmeg
2 1/2 t cloves
2 1/2 t allspice
1 1/2 T salt
2 qts apple cider
1 1/2 cup pineapple juice
4 1/2 cups apple juice
1/2 cup cider vinegar
Cook the beef, mix all ingredients together and cook til slightly thickened, about 1 hour. Cook a little longer if apples are very juicy. Spoon into HOT sterilized jars and seal. Makes 10-12 quarts per roaster **Lids need to be in hot water**

Hot water bath: quarts=25 minutes Pints=20 minutes Water needs to be 1″ over the jars, start to time when water boils
