Stromboli
1 pizza dough
3/4 cup pizza sauce
16 slices hard salami
20 slices pepperoni
1/4 pound thinly sliced ham
2 cups mozzarella cheese
1 tablespoon butter, melted
1/4 cup Parmesan cheese, grated
1/2 teaspoon Italian seasoning
Preheat your oven to 375. Roll out the pizza dough so that it is approximately 10 inches by 15 inches. Top with the pizza sauce. Then add the salami, pepperoni, ham, and mozzarella cheese. Roll the the dough up, starting with the short side. Pinch the two ends and fold them under. Place the stromboli seam side down on the parchment paper. Cut three or four slits in the top of the dough to let steam escape. Brush the dough with the melted butter. Then sprinkle with the cheese and the Italian seasoning. Bake for 30 to 35 minutes or until the crust is golden brown. Let stand for 10 minutes before slicing.

Fun fact: Calzones use ricotta cheese, and stromboli does not. Stromboli is made with mozzarella cheese (preferably low-moisture) to keep moisture at a minimum. This helps the interior dough cook fully.

Grilled Baby Back Ribs
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon paprika
S&P to taste
3 lbs baby back ribs
1 c bbq sauce
Preheat grill for high heat, Lightly oil the grate. Trim the membrane sheath from the back of each rack, take off the membrane as much as possible. Sprinkle as much of the rub onto both sides of the ribs as desired.
Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lay the ribs on the top rack of the grill (away from the coals, if you’re using briquettes). Reduce gas heat to low, close lid, and leave undisturbed for 1 hour. Do not lift the lid at all. Brush ribs with barbecue sauce, and grill an additional 5 minutes.

Cajun Chicken Alfredo With Broccoli
Shrimp
chicken breast
Cajun seasoning
salt
pepper
garlic
sweet red pepper
penne noodles
shredded Italian & pepper jack cheese
butter
heavy whipping cream and broccoli
Cut up breast season and cook with red peppers. Steam shrimp seasoned with old bay. Steam broccoli and boil noodles. Sauce heavy cream, Italian and pepper jack cheese once it’s melted into a sauce sprinkle pepper and salt for flavor add broccoli noodles chicken and shrimp.
