Friday’s Recipes: Homemade Snicker Bars and Easy Irish Soda Bread

Homemade Snickers by CK
2 cups milk chocolate chips
1/2 cup butterscotch chips
3/4 cup creamy peanut butter
1/4 cup butter (not margarine)
1 cup sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow creme (7 oz)
1 teaspoon vanilla
1 1/2 cups peanuts
11 ounce package caramels
1/4 cup heavy whipping cream
Put Parchment paper down and up the sides of a 9×13 pan. You may need to bind it to the pan until your layers build up! Chip clips work great.. Melt together 1 cup milk chocolate chips, 1/4 cup butterscotch chips, and 1/4 cup creamy peanut butter in saucepan on low (stirring so as not to scorch or burn) and then layer inside your pan.Put into freezer to hold while you go onto the next step.
In a pan, combine 1/4 cup butter, 1 cup sugar, and 1/4 cup evaporated milk and heat on the stove till boiling.
Let boil for 5 minutes while stirring occasionally.
Remove from heat and add all the marshmallow creme, 1/4 cup creamy peanut butter, the vanilla, and 1 1/2 cups of peanuts.Stir until well blended, then smooth over first layer and put back in freezer.
Carefully melt caramels with 1/4 cup whipping creme and then pour over as your third layer.
Return to freezer.
One more time, melt 1 cup milk chocolate chips, 1/4 cup butterscotch chips, and 1/4 cup creamy peanut butter and then you can spread on your last layer. Leave in the freezer a few hours to set and then move to fridge.

 

 

AMAZINGLY EASY IRISH SODA BREAD by GKT
4 c. flour
4 Tbsp. white sugar
1 tsp. baking soda
1 Tbsp. baking powder
½ tsp. salt
½ c. butter, softened
1 c. buttermilk
1 egg
¼ c. butter, melted
¼ c. buttermilk
Preheat oven to 375. Lightly grease a large baking sheet. In a large bowl, mix
together flour, sugar, baking soda, baking powder, salt and butter. Stir in 1 cup
of buttermilk and egg. Turn dough out onto a lightly floured surface and knead
slightly. Form dough into a round and place on prepared baking sheet. In a small
bowl, combine melted butter with ¼ c. buttermilk; brush loaf with this mixture.
Use a sharp knife to cut an ‘X’ into the top of the loaf. Bake in preheated oven until
a toothpick inserted into the center of the loaf comes out clean, 45-50 minutes.
Check for doneness after 30 minutes. You may continue to brush the loaf with the
butter mixture while it bakes.
