Friday’s Recipes: Ice Cube Apple Pies and Pan Fried Tuna Patty

ICE CUBE APPLE PIES by CK
2 apples, peeled, cored and diced small
3 tbsp brown sugar
1 tsp cinnamon
1 1/2 tsp corn starch
Ready made Pie Crust
1 egg wash
Demerara sugar
Pre-heat oven to 390ºF.
In a bowl, mix together apples, brown sugar, cinnamon and cornstarch
Place pre-rolled pie crust into an ice cube tray. Press into the center to create a small well. Place a 1/2 tsp of apple mixture into each well. Brush all edges with egg wash and top with another piece of rolled out pastry.
Using a rolling pin roll over the tray to seal the edges. Cut the excess pastry from around the edges and flip over onto a cutting board. Cut through the sealed edges to create individual cubes.
Brush each with egg wash and sprinkle with Demerara sugar. Bake for 25- 30 minutes until golden brown.
Serve as bites or on top of a bowl of ice cream with caramel sauce.

 

PAN FRIED TUNA PATTY by GKT
1 (5 oz.) can tuna packed in water, drained
1 egg
½ stalk celery, chopped
2 Tbsp. mayonnaise
2 Tbsp. chopped walnut
2 Tbsp. chopped fresh parsley, or to taste
1 tsp. chopped fresh dill, or to taste
1 Tbsp. butter
¼ c. shredded Cheddar cheese
Stir tuna, egg celery, mayonnaise, walnuts, parsley and dill together in a bowl until evenly combined.
Form mixture into two patties.
Melt butter in a skillet over medium heat. Cook patties in hot butter until firm and golden, 2 to 3 minutes;
flip and top each patty with Cheddar cheese. Continue cooking until second side is golden brown, 2 to 3
minutes more.
