OVERNIGHT BLUEBERRY FRENCH TOAST by CK
French Toast
12 slices bread, cut into cubes (french or Texas toast work well)
1 (8­ounce) cream cheese, cut in cubes
1 cup blueberries (fresh or frozen)
12 large eggs
⅓ cup maple syrup
2 cups milk or cream
1 teaspoon vanilla
Arrange ½ of the bread cubes in a greased 9 x 13 pan. Sprinkle cream cheese cubes and blueberries evenly over the bread cubes. Top and evenly sprinkle with remaining bread cubes. Mix together eggs, syrup, milk and vanilla in a large bowl. Pour over bread cubes. Press the bread cubes slightly down to absorb the milk/egg mixture. Cover pan with foil. Let
chill in refrigerator overnight. Bake covered with foil at 350 degrees for 30 minutes. Remove the foil and bake for another 30 minutes or until fluffy
and golden. Top with blueberry syrup.

Syrup
1 cup sugar
1 cup water
2 Tablespoons cornstarch
1 cup blueberries (fresh or frozen)
1 Tablespoon butter
In a medium saucepan over medium heat, cook water, sugar, and cornstarch until thickened. Stir in blueberries and simmer for 10 minutes. Add butter and stir until melted. Serve over the french toast.

 

 

FUDGE SUNDAE PIE by GKT
¼ c. corn syrup
2 Tbsp. brown sugar, packed
3 Tbsp. margarine or butter
2 ½ c. Rice Krispies
¼ c. peanut butter
¼ c. fudge sauce for ice cream
3 Tbsp. corn syrup
1 quart vanilla ice cream
Combine the ¼ cup corn syrup, brown sugar, and butter in saucepan.
Cook over low heat, stirring occasionally, until mixture begins to boil. Remove
From heat. Add Rice Krispies cereal, stirring until well coated. Press evenly in
9-inch pie pan to form crust.
Stir together peanut butter, fudge sauce and the 3 Tbsp. corn syrup.
Spread half the peanut butter mixture over crust. Freeze until firm.
Allow ice cream to soften slightly. Spoon into frozen pie crust, spreading
evenly. Freeze until firm. Let pie stand at room temperature about 10 minutes
before cutting. Warm remaining peanut butter mixture and drizzle over top.
