Friday’s Recipes: Stained Glass Pie and Red Beans & Rice 6.27.2014

Stained Glass Pie by CK
1 pkg lime Jello
2 pkgs strawberry Jello
1 pkg orange Jello
1/4 cup sugar
1 cup pineapple juice
1/2 cup cold water
2 cups whipped cream or whipped topping
2 – 9 inch graham cracker pie crusts
According to package directions, mix the lime, orange and one package of the strawberry Jello and pour into separate 8×8 pans. Chill until firm. Cut each into 1/2 inch cubes. Mix the sugar and pineapple juice together and heat to boiling. Dissolve into this heated mixture the final package of strawberry jello. And 1/2 cup cold water and stir until syrupy. Whip 2 cups of cream. Fold all together and smooth into the graham cracker crusts. Chill and serve.

Red Beans and Rice by BDM
Bring 1 ¼ c water and ½ c rice to a boil, reduce heat and simmer until all liquid is absorbed.
Meanwhile, brown 1 lb hamburger and 2 T chopped onion until no longer pink. Drain. Stir in one 15.5 oz can drained kidney beans
and one 8 oz can tomato sauce. Add ¼ t garlic salt and ½ t chili powder.Stir in the cooked rice. Heat mixture through and serve hot.
