Friday’s Recipes: Steak Marinades and Lemon Chicken 5.16.2014

“Charcoal steak” most likely refers to chuck arm steak or chuck steak. It is less tender than chuck and would require a marinade to tenderize before grilling or broiling. It also can be braised.

Steak Marinade
¼ cup of vegetable oil, olive oil, or peanut oil
1 teaspoon of Italian seasoning
2 tablespoons of red wine vinegar
1 ½ teaspoons of pepper
Marinate the steak for 30 minutes being sure that the all sides of the steak have been coated in the marinade. This is a wonderful marinade recipe for grilling or broiling your steak.

Spicier Steak Marinade
2 cups of your favorite beer
½ cup of olive oil
vegetable oil, or peanut oik
1 teaspoon of cayenne pepper
½ of vinegar
1 tablespoon of horseradish
1 teaspoon of onion powder
1 teaspoon garlic powder
2 tablespoons of lemon juice
Stir together all of the ingredients and marinate your steak in the refrigerator for 2-6 hours. It can be left overnight in the refrigerator. You can also use the marinade to baste your steak while cooking.


Lemon Chicken by BDM
Dredge chicken breasts in flour, salt and pepper

Brown in skillet in 2 t olive oil until done, remove from pan

Reserve ¼ c chicken stock, stir in remainder of 1 can chicken broth and 1 t minced garlic

Bring to a boil and stir in 2 c broccoli florets

Combine 2 T flour with the remaining ¼ c chicken broth

Slowly stir into simmering vegetables, add 2 t grated lemon zest

Stir until thickened, add chicken pieces back in, continuing to cook.

Just before serving stir in 1 T lemon juice.

Good over rice or noodles
