Friday’s Recipes: Lemon Bars and Crockpot Chocolate Bread Pudding

Lemon Bars by CK
3/4 cup margarine, softened
1   1/2 cup flour
3/8 cup sugar
3 eggs
3 Tbsp Lemon Juice
1   1/2 cups sugar
3 Tbsp flour
3/4 tsp baking powder
Mix first three ingredients and spred into a 9×13 pan. Bake at 350 degrees for 10-15 minutes, until slightly brown. Beat the eggs and add the remaining indredients to the eggs. Pour over crust when hot. Return to oven and bake 25 minutes. Cool

Frosting
1   1/2 cups powdered sugar
3 Tbsp margarine, melted
Lemon Juice
Mix well and drizzle over cooled bars.

 
Crockpot Chocolate Bread Pudding by BDM
Heat over medium heat until very warm but not boiling:
3 c milk
1 c sugar
¼ c butter
Stir occasionally, remove from heat
Add: 1 c semi sweet chocolate chips
2/3 c cocoa powder, but do not stir
Let stand for 5 minutes, add 1 T vanilla. Whisk until smooth, cool 10 more minutes. Whisk together 4 eggs and chocolate mixture
Gently stir in 6 c dry cubes Italian bread. Lightly spray inside of crockpot, and pour in the pudding. Cover and cook on low heat 2 ½ hours, it will be puffy and seem set when shaken. Turn off and let sit 30 minutes
