Friday’s Recipes: Baked Parmesan Tilapia & Potato Soup 2.21.2014

Baked Parmesan Tilapia by CK
4 filets tilapia
1 cup flour
1 Large egg
¾ cup grated Parmesan cheese
2 tsp paprika
1 Tbsp fresh parsley
1 Medium lemon, cut into wedges
1 dash Salt
1 dash pepper
PREHEAT oven to 400F.PLACE flour in shallow dish. BEAT egg and place in a separate shallow dish. COMBINE cheese, paprika and parsley in a shallow dish. DRIZZLE fish with olive or canola oil and DREDGE in flour, then egg, and then cheese
mixture. PLACE on foil-lined baking sheet and BAKE until opaque about 10 to 12 minutes. SERVE with lemon wedges
Potato Soup by BDM
Put the following into a stockpot with 5 c water:
6 potatoes, peeled and cubed
1 onion, diced
1 c carrots, sliced
1 c celery, sliced
4 chicken bullion cubes
1 T dried parsley
1 T salt
½ T pepper
Simmer until vegetables are tender. Remove from heat.
Add 1 (13 oz) can evaporated milk
1/3 c butter
Stir until butter is melted.
