Friday’s Recipes: Kolaches and Winter Fruit Salad 12.27.2013

Kolaches

 

 

 

 

 

Bohemian Kolaches by CK
2 packages (1/4 ounce each) active dry yeast
1/2 cup sugar, divided
2 cups warm milk (110° to 115°)
5-3/4 to 6-1/2 cups all-purpose flour
4 egg yolks
1 teaspoon salt
1/4 cup butter, softened
2 cups canned your choice of pie filling
1 egg white, beaten
In a small bowl, dissolve yeast and 1 tablespoon sugar in warm milk;let stand 10 minutes. In large bowl, combine 2 cups flour, remaining sugar, egg yolks, salt, butter and yeast/milk mixture. Mix untilsmooth. Add enough remaining flour to make a stiff dough. Turn out onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Add additional flour, if necessary. Place dough in greased bowl, turning once to grease top. Cover; let rise in a warm place until doubled in bulk, about 1 hour.
Punch dough down and allow to rise again. Roll dough into a rectangle, about an 1/8 inch thick. Cut into 4×4 squares. Place a large, heaping tablespoon of filling onto the center of each square. Brush the four corners of each square with water. Draw the corners up and gently press together. Secure with a toothpick. Place on well greased baking sheets, 2 inches apart. Cover; let rise in a warm place until nearly double (about 35 minutes).
Bake at 350° for 10-15 minutes or until rolls are light golden brown.

 

 

Winter Fruit Salad by BDM
20 oz can pineapple chunks, drained
3 oranges, peeled and sectioned (may use drained mandarin)
3 bananas, sliced
2 tart apples
2 T sugar
1/3 cup oil
1/4 cup orange juice
2 T vinegar
Mix sugar, oil, orange juice and vinegar together in a small jar and shake well. Place fruits in a bowl and cover with the dressing; toss gently. Just before serving, sprinkle with 1/3 cups chopped peanuts.
