Friday’s Recipes: Sausage & Penne Marinara and Summer Chicken Hotdish 7.12.2013

Sausage & Penne Marinara by CK
2-1/2 cups uncooked penne pasta
1 pound Italian sausage
1 large onion, halved and sliced
1 tablespoon canola oil
1 can (8 ounces) tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
Grated Parmesan cheese, optional
Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, onion in oil over medium heat until sausage is no longer pink and vegetables are tender. Add the tomato sauce and seasonings; heat through. Drain pasta; toss with tomato mixture. Sprinkle with cheese if desired.
If you like more sauce, you could also add 1 can (14-1/2 ounces) stewed tomatoes. You could also add 1 medium green pepper in when you brown the sausage.
Summer Chicken Hotdish by BDM
In a large bowl combine:
¾ c Miracle Whip
⅛ c lemon juice
½ t salt
¼ t pepper
Stir in:
1 ½ c cubed chicken
1 ½ c diced celery
½ c slivered almonds
¼ c chopped green pepper
½ c shredded cheddar cheese
Pour into greased 8 by 8’ baking dish. Top with 1 c crushed potato chips. Bake at 375˚ for 25 – 30 minutes until top is lightly browned
