3/4 cup Creamy Peanut Butter
1/2 cup Butter Flavor Shortening
1 1/4 cups firmly pack light brown sugar
3 T milk
1 T vanilla
1 3/4 cups flour
3/4 t salt
3/4 t baking soda
Heat oven to 375 degrees. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed with an electric mixer until well blended. Add egg. Beat just until blended. Combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoons full 2 inches apart onto ungreased baking sheet. Flatten slightly in crisscross pattern with tines of a fork. Bake for 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on the baking sheet. Remove cookies to foil to cool completely. Makes about 3 dozen.
Sweet and Creamy Macaroni Salad by BDM
Cook 1 pkg (16 oz) macaroni according to pkg directions
Drain and rinse in cold water. In a large serving bowl
4 medium carrots, shredded
1 large green pepper, chopped
1 medium red onion, chopped
In a small bowl whisk: 2 c mayonnaise
1 can (14 oz) sweetened condensed milk
1 c sugar
1 c cider vinegar
1 t salt
½ t pepper
Pour over macaroni mixture and toss to coat.
Cover and refrigerate overnight.
