Friday’s Recipes: Corned Beef with Vegetables and Irish Soda Bread 3.15.2013

CORNED BEEF AND VEGETABLES by CK
corned beef4 lbs. point cut corned beef brisket
2 cloves garlic
1 bay leaf
1 med. onion
6-8 pieces allspice
4 potatoes
1 sm. head cabbage
1 pkg. carrots
Soak corned beef in cold water about 1/2 hour. Drain. Put beef in large pot with water to cover.

Add garlic, bay leaf, onion and allspice. Simmer about 3 hours.
Remove beef from pot and set aside. Save cooking water and use it to cook vegetables until tender.

Warm beef, fat side up, at 350 degrees for about 20 minutes.

 

 

Irish Soda Bread by BDM

Soda breadStir together: 2 1/2 c flour
2 T sugar
1 t baking soda
1 t baking powder
½ t salt
2 t caraway seeds
Cut in 3 T margarine or butter with pastry blender
until mixture resembles fine crumbs. Stir in ⅓ c raisins
Mix 1 egg into
¾ c buttermilk and stir into flour mixture
Turn dough onto floured surface. Knead until smooth,
1 to 2 minutes. Shape into round loaf, place on greased
cookie sheet. Cut an X about ½ inch deep across top.
Bake at 375˚ until golden brown 35 to 45 minutes.
