Melt ¼ c butter in a heavy skillet
Add 1 c uncooked rice, stirring until grains are well coated and pale yellow,
Pour into baking dish
Heat 1 c chicken broth and 1 c tomato juice, pour over rice
Layer 2 sliced tomatoes over the top, salt and pepper. Cover.
Bake at 350˚ for about 30 minutes, or until liquid is absorbed.
Fluff with a fork, serves 4
