Friday’s Recipes: Mine Lasagnas and Apple Cake 2.15.2013

Mini Lasagnas by CK
Marinara sauce
Ricotta cheese
Mozzarella cheese
Parmesan cheese
Won ton wraps
Italian seasonings
Browned and drained Ground beef/sausage
Spray the cupcake pan with Pam & place one won ton wrap in each cup. Next layer sauce, cheeses and meat, then repeat. Sprinkle with Italian seasonings & bake at 375 degrees for 18-20 minutes. Let cool for 5 minutes & pop out with a knife. Depending on your appetite, figure 2-4 cups per person for a hearty dinner. You can find won ton wraps in the produce section in most grocery stores.




Apple Cake
Peel and chop 6 – 8 tart apples, set aside
Beat 2 eggs in a large bowl
Add: 1 c sugar
1 c milk and beat again
Mix together: 2 c flour
½ t salt
2 t baking powder
Stir into egg mixture, beat all together.Pour into two 9 inch greased cake pans or one 9 by 13 inch pan. Cover with chopped apples, sprinkle with sugar and cinnamon. Dot with butter. Bake at 350˚ for 45 – 50 minutes.
