Turkey Apple Salad by CK
2 1/2 cubes cooked turkey
2 cups diced celery
2 cups diced Granny Smith Apples
1/4 cup raisins
2 T low calorie mayo
2T plain low-fat yogurt
1/4 t nutmeg
1/4 tsp cinnamon
Salt and black pepper, to taste
Crisp lettuce leaves, optional
Shredded cheddar cheese, optional
In a large bowl, combine turkey,celery, apples and raisins.
In a small bowl, combine mayo, yogurt, nutmeg and cinnamon; fold into turkey mixture.
Season with salt and pepper.
Serve on crisp lettuce leaves and garnish with shredded cheddar cheese.
Southwestern Chicken Skillet by BDM
Heat 1 T oil in large skillet on medium-high heat
Add 4 boneless, skinless chicken breasts, cover
Cook 4 minutes on each side or until cooked through
Remove chicken from skillet, set aside
Add 2 c water
1 pkg (10 oz) frozen corn or 1 can corn, drained
1 c salsa to skillet
Mix well, bring to a boil, stir in 2 c Minute brown rice
Reduce heat to low, cover. Simmer 5 minutes. Top rice
with chicken. Sprinkle with ¼ c cheddar cheese. Cover
and simmer an additional 5 minutes.
